Easy Peasy Banana Bread Recipe


The first food I ever learnt to make was lettuce sandwiches. The second thing was this very Banana Bread – the recipe passed down to me from my mother! This delicious cakey bread makes a great afternoon snack to go with your tea or coffee, or served with a devilish scoop of ice cream when it’s still warm… Or if you are gluten sensitive (like myself) you can smile through gritted teeth as you watch everyone else reap the benefits of your urge to bake.  I am sure you could substitute the plain flour for coconut flour or other gluten-free alternative but I am yet to try this…

Banana Bread Ingredients


  • 285g Plain flour
  • 1 tsp Bicarbonate of soda
  • ½ tsp Salt
  • 110g Butter
  • 225g Sugar
  • 2 Eggs
  • 4 Bananas (mashed)
  • 85ml Milk with 1½ tsp vinegar (to make buttermilk)
  • 1 tsp Vanilla extract


Instructions For Making Banana Bread


  1. Preheat oven to 180ºC / 350ºF / Gas Mark 4
  2. Sift the flour, bicarbonate of soda and salt into a large mixing bowl
  3. In a separate bowl mix the butter and sugar together until it is light and fluffy
  4. Add the eggs, mashed bananas, buttermilk and vanilla extract in with the butter and sugar mixture then stir well
  5. Fold in the flour mix
  6. Grease an 8inch tin (I used a silicone heart shaped cake pan) and pour in the mix (I’m always surprised by how gloopy this looks so I added the gif above so you can see mine right before I poured it into the tin)
  7. Put in the oven for about an hour or until your banana bread is well risen and golden brown! (I tend to check it every 5-10 minutes after it has been baking for about 40 minutes, if you think it is done stick a knife in and if it comes out clean it is ready! If there is banana batter on the knife but it looks done on the outside I cover with foil and repeat every 5 minutes until the knife comes out clean).
